oven fried chicken

We eat a lot of chicken here. This is a new version of oven fried chicken  It's healthier without all the fat and almost as good. 
4 boneless skinless chicken breast pound out to about 1/2" thick
1 egg and 1T water mixed
1C flour
2C panko bread crumbs mixed with
1C grated Parmesan cheese, salt and pepper to taste
lay out your egg, flour and bread crumb mix in that order.  Dip the chicken in each turning to cover all sides.  Lay on a cookie sheet and chill 30-60 minutes.
Drizzle with olive oil
Bake 400 for 20-30 minutes depending on how big your pieces are.
Check at 20 minutes the chicken should be cooked through but don't let it dry out.
