tortilla soup

This is another great soup when it's cold and nasty outside.
2-3C cooked chicken chopped
1 green pepper, 1 onion chopped
1 can green chillies chopped
1 can diced tomatoes
1 can corn 1 can black beans
2-3 cloves garlic chopped
3-4C chicken stock
Salt and pepper and red pepper flakes to taste
Dump everything in a pot and simmer until vegetables are cooked through, about 30 minutes.
Serve with crushed corn chips, sour cream, grated cheddar or jack cheese and fresh cilantro. 

Make your own chips, they beat the stuff in a bag any day.

Baked chips
spray corn tortillas with Pam and then cut in wedges.  Bake on a cookie sheet at 400 5-7 minutes.  Watch them they burn fast.
